This is a fast and interactive Christmas recipe your kids will definitely enjoy. Use the snowballs as a holiday treat or to decorate your Christmas table. You won't even notice that the recipe is gluten-free as the cookies are so soft and creamy.
Butter 82.5%
100 g (7 tbsp)
Powdered sugar (sifted)
100 g (1 cup)
Gluten-free flour

Vanilla extract
3 g (½ tsp)
Corn starch
50 g (6 tbsp)
Xanthan gum
4 g (½ tbsp)
Salt
1 g (1 tsp)

Coconut flakes
Please follow the next steps:

Preheat the oven to 370 degrees Fahrenheit.

Mix butter with vanilla extract in a large bowl. Add half of the powdered sugar and mix till smooth. Use a hand mixer to beat the mixture till it becomes fluffy.

Use a blender on low speed or a pastry cutter to chop nuts. You can also do it with a knife, but it will take longer.

Mix flour, cornstarch, xanthan gum, salt, and chopped nuts in another bowl. Add some coconut flakes to your taste.

Gradually combine the two mixtures by slowly pouring the dry ingredients into the cream. Constantly stir the mixture. Put it in the fridge for one hour.

Pour the rest of the sugar powder into a bowl. Shape 1-inch balls from the mixture. Put the balls into the bowl to cover them with a thin layer of sugar powder. Then place them on a baking tray lined with parchment paper.

Bake for 12 minutes. Let cool. Cover them with more sugar powder with coconut flakes (optionally).
