Ravioli is one of the most popular Italian dishes. There is a huge variety of ravioli recipes. We propose you to get familiar with one of the simple options for preparing classic ravioli with ricotta and spinach.

Ravioli Recipe

Essential ingredients

  • Flour

    220 g (1 cup)

  • Eggs

    200 g (4 pieces)

  • Cooking Olive Oil

    100 g (½ cup)

  • Ricotta cheese

    130 g (½ cup)

  • Spinach

    150 g (3 cup)

Ingredients to taste

Salt, Black pepper, Nutmeg

How to make

Please follow the next steps:

    Sift flour into a bowl, make a depression in the middle, break 2 eggs into it, add olive oil, a little salt;

    Knead the dough well. It should be tight, but elastic;

    Form a ball from the dough and wrap with cling film and send it to rest for a couple of hours in the refrigerator;

    Meanwhile, prepare the stuffing. Wash, dry and cut the spinach.

    Let in a small amount of butter (+ splash a little vegetable oil into the pan so that the butter does not burn). Literally, a few minutes, until the spinach is reduced in volume.

    Take the dough out of the fridge, divide it in half and roll it thin (really thin) on a lightly floured surface.

    In a bowl, mix ricotta, spinach, 1 egg, nutmeg, and salt.

    Place one tablespoon of the filling on the dough at regular intervals. Lubricate the free edges with a brush with water and cover with a second sheet on top.

    We lay out the filling in rows with equal intervals from each other;

    Cover with the second layer of dough;

    We press the dough from the sides and cut it into squares;

    The edge is better to make corrugated. To do this, you can use a special knife or simply press down the dough with the cloves of a fork.

    Cook the ravioli in boiling salted water until they float to the surface, transfer to a plate, drizzle with olive oil, sprinkle with grated Parmesan (optional) and serve immediately.
