So here are the ingredients:

  •  One baby/ small watermelon
  •  One block feta
  •  Half cucumber
  •  One avocado
  •  Two tbsp apple cider vinegar
  •  Two tbsp olive oil
  •  One lime
  •  Large handful mint
  •  Salt and pepper

How to make:

  •  Start with watermelon. Slice it in half, remove the skin, and slice it into bite-size pieces. This first ingredient goes directly to the bowl.
  •  Then chop cucumber into quarters, avocado into bite-size pieces, and avocado into bite-size pieces. Add all to the bowl with watermelon.
  •  Add the roughly chopped mint.
  •  Dress the salad with vinegar, olive oil, and squeezed lime juice. Gently mix it all together with a large spoon.
